It is a soft and fluffy bread made with 3 to 5 ingredients. There are 2 types of the TikTok viral recipe:
- Savoury or flat cloud bread (also known as oopsie bread) which recipe usually calls for eggs, cream cheese, and cream of tartar or baking powder. It is a 3-ingredient cloud bread!
- TikTok cloud bread (fluffy, sweet, and puffy like a baked meringue or cotton candy) which asks for egg whites, sugar, and cornstarch (a binder for structure). It has a dome shape! Egg whites make meringue, sponge cake, angel food cake, macarons, and cloud bread possible!
Keto Cloud Bread Recipe (TikTok)
Because we are making a Tiktok keto cloud bread, we'll need chilled egg whites, erythritol (instead of sugar), xanthan gum (instead of cornstarch), salt, and flavorings (almond extract and sliced almonds).
It will be puffy like a baked meringue but without all the sugar.
Ingredients and substitutions
- 5 chilled large egg whites: In order to make this cloud bread puffy, it is key the egg whites are chilled (as well as the bowl of your mixer) and there is not a single spot of grease in the mixer bowl and beaters. Reserve the egg yolks to make quindim.
- ½ teaspoon xanthan gum: It is a keto binder that replaces cornstarch. It helps absorb any liquid left in the cloud bread, giving it a fluffy and pillow-like look.
- ½ teaspoon cream of tartar: It will act as a stabilizer. You may replace it with 1 teaspoon of lemon juice if you want.
- ¼ teaspoon salt
- 1 teaspoon almond extract: We used it as a flavoring but you are welcome to replace it with pure vanilla extract. You may also add a few drops of blue food coloring to make it colorful (or any color of choice)!
- 3 tablespoons granulated erythritol or any granulated sweetener of choice: You may use granulated white sugar if you are not on a keto diet. Sweeteners can cause “weeping” or “sweating” if xanthan is not added to the recipe.
- ½ cup sliced almonds: We added them to the bread and also as a topping as an additional flavoring. After all, you don't want your mildly sweet cloud bread to be tasteless, right?
How to make TikTok cloud bread
- Preheat the oven to 300° F (150° C).
- Make sure the bowl of your mixer is super clean (does not have a hint of grease in it) and is dry.
- Beat the egg whites until foamy. SEE PIC. 1 Add the xanthan gum, cream of tartar, and salt. SEE PIC. 2 Beat again until soft peaks form.
- Then add the extract and beat again until incorporated. When the mixer running, gradually add the sweetener and continue to beat until stiff peaks form. SEE PICS. 3 & 4
- Gently fold in the almonds with a rubber spatula. SEE PIC. 5 Place 4 mounds of the beaten mixture onto a large baking sheet lined with parchment paper. SEE PIC. 6
- Mold each like a chubby ball. They must be tall! This way, they will become chubby or puffy after baking.
- Decorate their tops and sides with the sliced almonds all over. SEE PIC. 7
- Bake for 45-55 minutes or until they become golden brown, puff up and are firm (or looked baked). Let keto almond bread rolls cool just enough to eat! SEE PIC. 8 They will have a light and airy texture inside. Enjoy it by itself or with a keto blueberry curd.
Tips on Making TikTok Keto Cloud Bread
- Preferably use a stand mixer that can whip up the egg whites well and faster. Adding air bubbles will make them gain volume and expand.
- The mixer bowl and beaters must be clean (without any trace of egg yolk or any hint of grease) and dry; otherwise the egg whites won't become stiff.
- The egg whites have to be beaten to stiff peaks, or the cloud bread won't rise enough!
- A cream of tartar will act as a stabilizer while the xanthan gum will be a binder and give cloud bread some structure.
- Because our keto cloud bread will bake longer, you will need to use a granulated sweetener that won't dissolve so fast under heat.
- You can flavor your cloud bread with whatever you want. Here are a few suggestions: coconut extract, pure vanilla extract, rum extract, etc. Make sure to add at least one teaspoon to our cloud bread recipe; otherwise, it will taste eggy!
