HOW TO MAKE CREAMY SHRIMP SCAMPI
In a large cast-iron skillet, heat the oil over medium heat for about 1 minute. Then add the garlic and let cook, stirring, for about 1 minute. Do not let brown!
Add the shrimp and lemon zest; season with salt (and red pepper flakes, if desired). Toss until the shrimp turns pink and opaque in the center, which should take about 3 minutes. Add the white wine; toss 1 minute. Add Carnation Evaporated Milk and stir just until sauce is homogeneous. Let cook for about 1-2 minutes.
Remove pan from the heat, stir in lemon juice. If you want, sprinkle chopped parsley and/or basil leaves. Serve over pasta, zoodles or with a hard-crusted bread to soak in the sauce. Enjoy!
WHAT'S SHRIMP SCAMPI?
Scampi itself is an Italian dish that consists of langoustines (saltwater crayfish-like crustaceans) cooked with olive oil or butter, garlic, onion and white wine.
In contrast, shrimp scampi is in fact an Italian-American adaptation of the classic scampi. Italian cooks in the United States replaced scampi with shrimp but kept both names.
Variations followed --some adding tomatoes, breadcrumbs, different herbs, or substituting other spirits for wine. Our quick shrimp scampi recipe is one of those variations. Simple, yummy and a time saver.
Some versions even thicken the keto shrimp scampi sauce with a mixture of cornstarch and water.
EASY SHRIMP SCAMPI RECIPE STORAGE:
Store low carb shrimp scampi with wine in an airtight container in the fridge for up to one day. Mix well before serving. Freeze for up to 2 months.
EXTRA INGREDIENTS/SUBSTITUTIONS:
If you'd like to you can easily substitute butter for olive oil or use half of each. Love onions? Add chopped onions and cook them for about 3 minutes before adding the garlic.
For a spicy version of this creamy shrimp scampi, add a pinch of red pepper flakes after seasoning with salt. You could also top the dish with any fresh herbs of your liking.
Easy Creamy Shrimp Scampi Recipe

- 2 lbs large shrimp thawed and pat dry (peeled and deveined, tails left on or off according to your preference)
- 1 lemon zested and then juiced
- salt to taste
