Coffee & Cream Popsicles
Ingredients
- 240 ml espresso – 1 cup
- 120 ml heavy cream – ½ cup
- Sugar to taste
- 120 ml heavy cream – ½ cup
- 3 tablespoon honey
Instructions
- Mix 120 ml – ½ cup of cream with coffee and add sugar to taste. Chill.
- Slightly warm the remaining 120 ml – ½ cup of cream and mix it with the honey until melted.
- Pour the cream and honey mixture into the popsicle moulds and freeze until solid.
- When the cream has hardened, add the chilled coffee mixture to the moulds and freeze overnight.
- When ready, unmould and serve immediately. Makes 6 x 80 ml – ⅓ cup popsicles

Truly, a wonderful eBook review dear Denise! Manuela did a great job indeed! We wish we could also publish a similar eBook ourselves, but the taxing system here in Greece is horrible for new entrepreneurs, so we can't do anything similar unless we know in advance(!) that we're gonna make a lot of money(!). But, anyway, this isn't about us, it's about Manu's Menu fantastic recipe book !:):)
What is your favorite ice cream flavor Denise? I (Mirella) love mocha coffee and Panos likes more traditional Greek ice creams like "kaimaki" (mastic flavor) and ekmek (includes an syrup-drenched angel hair pastry as a base).

What a pity that your taxation is that bad. I would love to have any of your recipes here. I love to eat so it's pretty hard for me to pick only one flavor. But if I had to choose only one would be something with fruit such as cajá, a typical fruit of Brazil. Sending you both our love... Take care!

I wish you guys could taste it. It's like nothing you have tasted before. My husband is American. Every time we visit Brazil, my mother prepares a jar of cajá juice and also other typical fruit juices for him. He is a fan of all the fruits that we don't find here in the US... and of course, we consume in all forms down there including frozen treats. 🙂 Have an awesome day!
